Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Add black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15-20 minutes or until quinoa is cooked.
- Fluff with a fork and garnish with cilantro.
Notes
- Adjust spices to your taste.
- Serve with avocado or lime for extra flavor.
