Description
Delicious potato cheddar chive bakes that are crispy on the outside and creamy on the inside.
Ingredients

- 4 medium potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh chives
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the diced potatoes until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add cheddar cheese, chives, sour cream, milk, garlic powder, salt, and pepper to the potatoes.
- Mash the mixture until well combined.
- Form the mixture into small patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for 3-4 minutes on each side until golden brown.
- Transfer the patties to a baking sheet and bake for 10 minutes.
- Serve hot and enjoy!
Notes
- You can substitute green onions for chives.
- Serve with a side of sour cream for dipping.
