Description

Delicious potato cheddar chive bakes that are crispy on the outside and creamy on the inside.


Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the diced potatoes until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add cheddar cheese, chives, sour cream, milk, garlic powder, salt, and pepper to the potatoes.
  5. Mash the mixture until well combined.
  6. Form the mixture into small patties.
  7. Heat olive oil in a skillet over medium heat.
  8. Cook the patties for 3-4 minutes on each side until golden brown.
  9. Transfer the patties to a baking sheet and bake for 10 minutes.
  10. Serve hot and enjoy!

Notes

  • You can substitute green onions for chives.
