Ingredients

- 1 cup pumpkin puree
- 2 cups rolled oats
- 1/2 cup honey
- 1/4 cup almond butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, honey, and almond butter.
- Add oats, cinnamon, nutmeg, and salt. Stir until combined.
- If using, fold in chopped nuts and dried fruit.
- Spread the mixture evenly in a greased baking pan.
- Bake for 25-30 minutes or until set and lightly golden.
- Let cool before cutting into bars.

- Store bars in an airtight container.
- Great for meal prep.
