Delicious pumpkin cheesecake truffles coated in chocolate.
Ingredients

- 8 oz cream cheese, softened
- 1 cup pumpkin puree
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 2 cups chocolate chips
- 1 tbsp coconut oil
Instructions
- In a bowl, mix cream cheese, pumpkin puree, powdered sugar, vanilla, and pumpkin pie spice until smooth.
- Chill the mixture for 1 hour.
- Form the mixture into small balls.
- Freeze the balls for 30 minutes.
- Melt chocolate chips with coconut oil.
- Dip each ball into the melted chocolate.
- Place on parchment paper and let cool until set.
Notes
- Store truffles in the refrigerator.
- Use white chocolate for a different flavor.
- Garnish with crushed nuts if desired.
