Delicious pumpkin cheesecake truffles coated in chocolate.
Ingredients

- 8 oz cream cheese
- 1 cup pumpkin puree
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 cup graham cracker crumbs
- 12 oz chocolate chips
Instructions
- In a bowl, mix cream cheese, pumpkin puree, powdered sugar, vanilla, and pumpkin pie spice.
- Stir in graham cracker crumbs until well combined.
- Shape mixture into small balls and place on a baking sheet.
- Chill in the refrigerator for at least 30 minutes.
- Melt chocolate chips in a microwave or double boiler.
- Dip each truffle into the melted chocolate, coating completely.
- Place back on the baking sheet and chill until set.
Notes
- Store truffles in the refrigerator.
- Use white chocolate for a different flavor.
- Roll truffles in crushed nuts for added texture.
