Ingredients

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
  4. Gradually add dry ingredients to the wet mixture and stir until combined.
  5. Fill muffin cups 2/3 full with the batter.
  6. Sprinkle cinnamon sugar on top of each muffin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool before serving.
