Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, and butter.
  3. Add egg and vanilla extract; mix well.
  4. In another bowl, combine flour, baking soda, cream of tartar, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture; stir until combined.
  6. In a small bowl, mix sugar and cinnamon for coating.
  7. Shape dough into balls and roll in the sugar mixture.
  8. Place on a baking sheet and flatten slightly.
  9. Bake for 10-12 minutes or until edges are golden.
  10. Cool on wire racks.
