Ingredients

  • 1 cup freeze-dried raspberries
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut oil

Instructions

  1. Soak the pitted dates in warm water for 10 minutes.
  2. Drain and add dates to a food processor.
  3. Add pistachios, freeze-dried raspberries, shredded coconut, and coconut oil.
  4. Process until mixture is sticky and well combined.
  5. Roll the mixture into small balls.
  6. Chill in the refrigerator for 30 minutes before serving.
