Description

Ingredients

  • 4 chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix roasted red peppers, spinach, and mozzarella in a bowl.
  3. Cut a pocket in each chicken breast.
  4. Stuff each pocket with the mixture.
  5. Season the outside of the chicken with garlic powder, onion powder, salt, and pepper.
  6. Heat olive oil in a skillet over medium heat.
  7. Sear the chicken on both sides until golden brown.
  8. Transfer the chicken to a baking dish and bake for 20-25 minutes.
  9. Ensure the chicken is cooked through before serving.
