Ingredients

- 2 cups assorted vegetables (bell peppers, zucchini, carrots)
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon maple syrup
- 1 tablespoon dijon mustard
- 2 tablespoons tahini
- 2 tablespoons water
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the vegetables into bite-sized pieces.
- In a bowl, mix the vegetables and chickpeas with olive oil, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes, or until vegetables are tender.
- In a small bowl, whisk together maple syrup, dijon mustard, tahini, water, and lemon juice.
- Once the veggies are done, remove from the oven and let cool slightly.
- Drizzle the dressing over the roasted veggies and chickpeas.
- Garnish with fresh parsley and serve.
