Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the vegetables into bite-sized pieces.
  3. Toss the vegetables with olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread the vegetables on a baking sheet.
  5. Roast in the oven for 20-25 minutes until tender.
  6. In a bowl, layer the hummus at the bottom.
  7. Add the roasted vegetables on top of the hummus.
  8. Garnish with fresh parsley.
