Ingredients

- 2 large sweet potatoes, peeled and thinly sliced
- 2 parsnips, peeled and thinly sliced
- 2 medium beets, peeled and thinly sliced
- 2 cups heavy cream
- 1 cup grated cheese (such as Gruyère or cheddar)
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, layer the sweet potatoes, parsnips, and beets.
- In a bowl, mix the heavy cream, garlic, salt, pepper, and thyme.
- Pour the cream mixture over the layered vegetables.
- Sprinkle the grated cheese on top.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, until golden brown.
Notes
- Let the gratin sit for 10 minutes before serving.
- Use a mandoline for even slicing.
- Feel free to add other root vegetables like carrots or turnips.
