Ingredients

  • 2 parsnips, peeled and thinly sliced
  • 2 medium beets, peeled and thinly sliced
  • 2 cups heavy cream
  • 1 cup grated cheese (such as Gruyère or cheddar)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, layer the sweet potatoes, parsnips, and beets.
  3. In a bowl, mix the heavy cream, garlic, salt, pepper, and thyme.
  4. Pour the cream mixture over the layered vegetables.
  5. Sprinkle the grated cheese on top.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, until golden brown.
