A delicious and easy-to-make salmon sushi bake that combines the flavors of sushi in a comforting casserole.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 1 pound cooked salmon, flaked
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1/4 cup green onions, chopped
- 1 sheet nori, cut into strips
- Sesame seeds for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- In a separate bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, stir in the vinegar mixture and let it cool.
- In a baking dish, spread the cooled rice evenly.
- In another bowl, mix the flaked salmon, mayonnaise, sriracha, and green onions.
- Spread the salmon mixture over the rice.
- Bake for 25 minutes until heated through.
- Garnish with nori strips and sesame seeds before serving.
Notes
- Use fresh or canned salmon based on availability.
- Adjust the sriracha for desired spice level.
- Serve with soy sauce and pickled ginger if desired.
