- 6 fresh sausage links or patties (pork, turkey, or chicken)
- 6 large eggs
- 6 soft bread rolls (dinner rolls, hoagies, or croissants)
- 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
- Salt and pepper, to taste
- 1/2 tsp garlic powder (optional)
- 1/2 tsp onion powder (optional)
- 1 tbsp butter or oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- Remove sausage from casings if needed and cook in a skillet over medium heat with a bit of butter or oil for 5–7 minutes until browned and fully cooked. Set aside.
- In a bowl, whisk eggs with salt, pepper, and optional seasonings.
- In the same skillet, scramble eggs over medium-low heat until fluffy and just set, about 3–4 minutes.
- Slice the rolls open and layer cooked sausage, scrambled eggs, and shredded cheese inside each roll.
- Place assembled rolls on a parchment-lined baking sheet.
- Bake for 10–15 minutes until rolls are golden and cheese is melted.
- Let cool slightly before serving and enjoy warm!
Notes
Customize with vegetables like spinach or bell peppers, or add a spicy kick with hot sauce or jalapeños. Can be made ahead or frozen for convenience.
