Ingredients

- 1 cup lentils
- 2 cups vegetable broth
- 1 teaspoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Rinse lentils under cold water.
- In a pot, combine lentils and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper and cumin, cook for another 5 minutes.
- Combine sautéed vegetables with lentils.
- Season with salt and black pepper.
- Serve warm, garnished with parsley.

- Can substitute vegetable broth with water.
- Adjust seasoning to your preference.
