Ingredients

  • 2 cups vegetable broth

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced

  • Salt to taste

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, combine lentils and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add bell pepper and cumin, cook for another 5 minutes.
  7. Combine sautéed vegetables with lentils.
  8. Season with salt and black pepper.
  9. Serve warm, garnished with parsley.
