Description
Seared salmon served with roasted potatoes and paprika aioli.
Ingredients

- 4 salmon fillets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 medium potatoes, diced
- 2 tablespoons paprika
- 1 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast potatoes for 25-30 minutes, until golden brown and tender.
- While potatoes roast, heat a skillet over medium-high heat.
- Season salmon fillets with salt and pepper.
- Add salmon to the skillet, skin-side down, and cook for 4-5 minutes.
- Flip salmon and cook for another 3-4 minutes until cooked through.
- In a small bowl, mix mayonnaise, paprika, lemon juice, and garlic for the aioli.
- Serve salmon with roasted potatoes and drizzle with paprika aioli.
