Seared salmon served with roasted potatoes and paprika aioli.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 medium potatoes, diced
  • 2 tablespoons paprika
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 25-30 minutes, until golden brown and tender.
  4. While potatoes roast, heat a skillet over medium-high heat.
  5. Season salmon fillets with salt and pepper.
  6. Add salmon to the skillet, skin-side down, and cook for 4-5 minutes.
  7. Flip salmon and cook for another 3-4 minutes until cooked through.
  8. In a small bowl, mix mayonnaise, paprika, lemon juice, and garlic for the aioli.
  9. Serve salmon with roasted potatoes and drizzle with paprika aioli.
