- 1 lb ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 2 cups peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 4 cups mashed potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat.
- Add onion and carrots, and sauté until soft.
- Add ground meat and cook until browned.
- Stir in tomato paste and beef broth.
- Add peas and season with salt and pepper.
- Spread the meat mixture in a baking dish.
- Top with mashed potatoes, smoothing out the surface.
- Bake for 25-30 minutes until the top is golden.
Notes
- Use leftover mashed potatoes for quicker preparation.
- Feel free to add other vegetables like corn or green beans.
- For a twist, add cheese on top of the mashed potatoes.
