A hearty and comforting Shepherd’s Pie Soup that combines the flavors of traditional shepherd’s pie in a warm, soupy form.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, peeled and cubed
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until vegetables soften.
- Stir in the tomato paste and Worcestershire sauce.
- Add the beef broth and potatoes. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Add frozen peas and thyme. Cook for an additional 5 minutes.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, mash some of the potatoes before serving.
- Leftovers can be stored in the fridge for up to 3 days.
