Description

A hearty and comforting Shepherd’s Pie Soup that combines the flavors of traditional shepherd’s pie in a warm, soupy form.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, peeled and cubed
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until vegetables soften.
  3. Stir in the tomato paste and Worcestershire sauce.
  4. Add the beef broth and potatoes. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  6. Add frozen peas and thyme. Cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.

Notes

  • For a thicker soup, mash some of the potatoes before serving.
  • Leftovers can be stored in the fridge for up to 3 days.
