Ingredients

- 1 pound ground beef or lamb
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until softened.
- Add ground beef or lamb, cook until browned.
- Stir in carrots and potatoes, cook for about 5 minutes.
- Add beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add frozen peas and cook for an additional 5 minutes.
- Adjust seasoning as needed and serve hot.
Notes
- This soup can be made ahead and stored in the fridge for up to 3 days.
- Freeze leftovers in individual portions for quick meals.
- Add more vegetables like corn or green beans if desired.
