Ingredients

- 1 pound shrimp, peeled and deveined
- 2 ripe avocados
- 1 cucumber
- 1 lime, juiced
- 1 tablespoon olive oil
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water until pink, about 2-3 minutes.
- Remove shrimp and let cool.
- Dice the cooled shrimp and mix in a bowl with avocado, lime juice, olive oil, red onion, and cilantro.
- Slice the cucumber lengthwise and scoop out seeds to create boats.
- Fill cucumber boats with shrimp and avocado mixture.
- Season with salt and pepper.
- Serve immediately.
