Description

A hearty and flavorful slow cooker casserole with ground beef, beans, and corn.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add onions and cook until softened.
  3. Transfer beef and onion mixture to the slow cooker.
  4. Add black beans, kidney beans, corn, diced tomatoes, beef broth, chili powder, garlic powder, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Before serving, stir in shredded cheddar cheese until melted.
