A hearty and flavorful slow cooker casserole with ground beef, beans, and corn.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add onions and cook until softened.
- Transfer beef and onion mixture to the slow cooker.
- Add black beans, kidney beans, corn, diced tomatoes, beef broth, chili powder, garlic powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir in shredded cheddar cheese until melted.

- Serve with crusty bread or over rice.
- Can be topped with sour cream or green onions.
