A hearty and comforting dish made with ground beef, beans, and cheese cooked slowly in a casserole.
Ingredients

- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add onion and garlic, cooking until onion is soft.
- Transfer the beef mixture to the slow cooker.
- Add kidney beans, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add shredded cheddar cheese on top and let it melt.
Notes
- Serve with tortilla chips or over rice.
- Can be made ahead and stored in the refrigerator.
- Freeze leftovers for future meals.
