Description

A hearty and comforting dish made with ground beef, beans, and cheese cooked slowly in a casserole.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add onion and garlic, cooking until onion is soft.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. In the last 30 minutes, add shredded cheddar cheese on top and let it melt.

Notes

  • Serve with tortilla chips or over rice.
  • Can be made ahead and stored in the refrigerator.
  • Freeze leftovers for future meals.
