Description
A hearty slow cooker cowboy casserole filled with meat, beans, and cheese.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained
- 1 can pinto beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup chopped onions
- 1 cup chopped bell peppers
Instructions
- Brown the ground beef in a skillet over medium heat.
- Drain excess fat and transfer beef to the slow cooker.
- Add black beans, pinto beans, corn, diced tomatoes, taco seasoning, onions, and bell peppers.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours.
- In the last 30 minutes, add shredded cheese on top.
- Serve hot and enjoy.

- Adjust seasoning to taste.
- Can substitute ground turkey for beef.
