- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can diced tomatoes with green chilies (10 oz)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your smoker to 225°F.
- In a bowl, combine cream cheese, cheddar, Monterey Jack, tomatoes, onion, bell pepper, garlic powder, smoked paprika, salt, and pepper.
- Transfer the mixture to a cast-iron skillet.
- Place the skillet in the smoker and close the lid.
- Smoke for 45 minutes to 1 hour until the cheese is melted and bubbly.
- Stir the dip and serve warm with tortilla chips.
Notes
- Use more or less spice based on your taste.
- Serve with fresh veggies for a healthier option.
- You can make this dip in the oven at 350°F for 25-30 minutes if you don’t have a smoker.
