Smoky Bourbon BBQ Meatloaf Cupcakes with Mashed Potato Frosting are a unique twist on classic meatloaf, served in cupcake form and topped with creamy mashed potatoes.

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1/4 cup milk
- 1 egg
- 1/4 cup BBQ sauce
- 2 tbsp bourbon
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 cups mashed potatoes
- 1/4 cup butter
- 1/4 cup cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix ground beef, breadcrumbs, onion, milk, egg, BBQ sauce, bourbon, smoked paprika, salt, and pepper.
- Fill muffin tin with the meat mixture.
- Bake for 25-30 minutes until cooked through.
- While baking, prepare mashed potatoes with butter and cream.
- Once meatloaf cupcakes are done, let them cool slightly.
- Pipe the mashed potatoes on top of the meatloaf cupcakes.
- Serve with additional BBQ sauce if desired.
Notes
- You can use ground turkey for a lighter option.
- Customize the BBQ sauce to your taste.
- Store leftovers in the refrigerator for up to 3 days.
