Description

Smoky Bourbon BBQ Meatloaf Cupcakes with Mashed Potato Frosting are a unique twist on classic meatloaf, served in cupcake form and topped with creamy mashed potatoes.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup BBQ sauce
  • 2 tbsp bourbon
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 1/4 cup butter
  • 1/4 cup cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, breadcrumbs, onion, milk, egg, BBQ sauce, bourbon, smoked paprika, salt, and pepper.
  3. Fill muffin tin with the meat mixture.
  4. Bake for 25-30 minutes until cooked through.
  5. While baking, prepare mashed potatoes with butter and cream.
  6. Once meatloaf cupcakes are done, let them cool slightly.
  7. Pipe the mashed potatoes on top of the meatloaf cupcakes.
  8. Serve with additional BBQ sauce if desired.
