A hearty Southwest Breakfast Burrito Bowl filled with eggs, beans, and veggies.
Ingredients

- 4 eggs
- 1 cup black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 small onion, diced
- 1 avocado, diced
- 1/2 cup salsa
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a skillet over medium heat.
- Add diced onion and bell pepper. Cook until soft.
- In a bowl, whisk eggs with cumin, paprika, salt, and pepper.
- Pour eggs into the skillet and scramble with the vegetables.
- Add black beans and corn. Stir to combine and heat through.
- Serve in bowls topped with avocado, salsa, and cilantro.
Notes
- For extra spice, add jalapeños.
- Use whole grain tortillas on the side if desired.
