Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1/2 cup bell pepper, diced
- 1/4 cup green onions, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1 cup shredded cheese
- 8 egg roll wrappers
- Oil for frying
Instructions
- In a bowl, combine chicken, black beans, corn, bell pepper, green onions, cumin, chili powder, and salt.
- Place a spoonful of the mixture on an egg roll wrapper.
- Sprinkle cheese over the filling.
- Fold the wrapper and seal the edges with water.
- Heat oil in a frying pan over medium heat.
- Fry the egg rolls until golden brown on all sides.
- Drain on paper towels.
- Serve hot with dipping sauce.
