  • 8 egg roll wrappers

Instructions

  1. In a bowl, combine chicken, black beans, corn, bell pepper, green onions, cumin, chili powder, and salt.
  2. Place a spoonful of the mixture on an egg roll wrapper.
  3. Sprinkle cheese over the filling.
  4. Fold the wrapper and seal the edges with water.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the egg rolls until golden brown on all sides.
  7. Drain on paper towels.
  8. Serve hot with dipping sauce.
