Description

A delicious baked spaghetti squash dish with a creamy cheese topping.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the squash and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet. Bake for 30-40 minutes until tender.
  5. Once cooked, scrape the flesh with a fork to create strands.
  6. In a bowl, mix the spaghetti squash strands, heavy cream, cheddar cheese, garlic, and half of the Parmesan cheese.
  7. Transfer the mixture to a baking dish and sprinkle the remaining Parmesan cheese on top.
  8. Bake for an additional 20 minutes until golden and bubbly.
  9. Garnish with fresh parsley before serving.

  • For a healthier version, use low-fat cheese and cream.
  • Can add cooked bacon or sausage for extra flavor.
