A delicious baked spaghetti squash dish with a creamy cheese topping.
Ingredients

- 1 medium spaghetti squash
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the squash and season with salt and pepper.
- Place the squash cut-side down on a baking sheet. Bake for 30-40 minutes until tender.
- Once cooked, scrape the flesh with a fork to create strands.
- In a bowl, mix the spaghetti squash strands, heavy cream, cheddar cheese, garlic, and half of the Parmesan cheese.
- Transfer the mixture to a baking dish and sprinkle the remaining Parmesan cheese on top.
- Bake for an additional 20 minutes until golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
- For a healthier version, use low-fat cheese and cream.
- Can add cooked bacon or sausage for extra flavor.
- Store leftovers in an airtight container in the refrigerator.
