Description
A traditional dish made with rice and beans, seasoned with spices.
Ingredients

- 1 cup long-grain rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add rice, stirring for 2 minutes.
- Add black beans, broth, cumin, paprika, and salt.
- Bring to a boil, then reduce heat to low.
- Cover and cook for 20 minutes or until rice is tender.
- Fluff with a fork and garnish with cilantro.
Notes
- Adjust spices according to your taste.
- Can substitute black beans with pinto beans.
- Serve with avocado for added flavor.
