- 1 packet taco seasoning
- 1/2 cup diced tomatoes

- 1 cup cornmeal
- 1 cup water
- 1 egg
- 1/2 cup salsa
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet.
- Add taco seasoning and tomatoes; mix well.
- In a bowl, combine cornmeal, water, egg, and salsa.
- Pour the cornmeal mixture into cupcake liners in a muffin tin.
- Add the beef mixture on top of the cornmeal.
- Sprinkle cheese on top.
- Bake for 20-25 minutes.
- Garnish with cilantro before serving.
