A refreshing and spicy salad featuring cucumbers and carrots with sesame flavor.
Ingredients

- 2 medium cucumbers, sliced
- 2 large carrots, julienned
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili oil
- 1 teaspoon sesame seeds
- 1 clove garlic, minced
- 1 teaspoon sugar
Instructions
- In a large bowl, combine cucumbers and carrots.
- In a separate bowl, mix sesame oil, soy sauce, rice vinegar, chili oil, garlic, and sugar.
- Pour the dressing over the vegetables and toss well.
- Sprinkle sesame seeds on top.
- Let the salad sit for 10 minutes before serving.
Notes
- Adjust the spiciness by adding more or less chili oil.
- For more crunch, add chopped peanuts or cashews.
