A hearty and comforting steak and potato soup perfect for chilly days.
Ingredients

- 1 lb steak, cubed
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon thyme
- 1 teaspoon rosemary
Instructions
- Heat olive oil in a large pot over medium heat.
- Add cubed steak and brown on all sides.
- Remove steak and set aside.
- Add onion and garlic, sauté until translucent.
- Add potatoes, beef broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add steak back to the pot and simmer for an additional 10 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, mash some potatoes before adding cream.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
