- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 cups fresh strawberries, pureed
- 2 tsp baking powder
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 2 tbsp milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and strawberry puree.
- In another bowl, combine flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Pour the batter into prepared cake pans.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Let the cakes cool completely.
- For the icing, beat cream cheese and powdered sugar, adding milk until smooth.
- Spread icing on the cooled cakes and serve.
Notes
- Use fresh strawberries for best flavor.
- Ensure the cream cheese is at room temperature for smooth icing.
- You can add more strawberries on top for decoration.
