- 1 cup fresh strawberries, pureed
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups powdered sugar
- 2 tablespoons butter, softened
- 2 tablespoons milk
- 1 teaspoon strawberry extract
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and granulated sugar.
- Add the eggs, milk, and vanilla extract. Mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the pureed strawberries.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
- For the frosting, beat together the softened butter, powdered sugar, milk, and strawberry extract until smooth. Add food coloring if desired.
- Once the cake is cool, spread the pink frosting on top.
Notes
- Store leftovers in an airtight container.
- Can replace fresh strawberries with frozen ones if needed.
- Adjust sweetness of frosting to taste.
