Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 2 tablespoons butter, softened
  • 2 tablespoons milk
  • 1 teaspoon strawberry extract
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and granulated sugar.
  3. Add the eggs, milk, and vanilla extract. Mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the pureed strawberries.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  10. For the frosting, beat together the softened butter, powdered sugar, milk, and strawberry extract until smooth. Add food coloring if desired.
  11. Once the cake is cool, spread the pink frosting on top.
