A delicious treat combining strawberries and cheesecake in a bite-sized truffle.
Ingredients

- 1 cup crushed strawberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix together crushed strawberries, cream cheese, powdered sugar, and vanilla extract.
- Form the mixture into small balls and roll in graham cracker crumbs.
- Place truffles on a baking sheet and freeze for 30 minutes.
- Melt white chocolate chips with coconut oil in a microwave.
- Dip each frozen truffle into the melted chocolate and place back on the baking sheet.
- Chill until the chocolate hardens.

- Use fresh strawberries for best flavor.
- Store truffles in the fridge for up to a week.
