  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Place the squashes cut-side down on a baking sheet and roast for 25 minutes.
  4. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce to a simmer and cover for 15 minutes.
  5. In a bowl, mix cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
  6. Turn the squashes over and fill each half with the quinoa mixture.
  7. Return to the oven and bake for an additional 15 minutes.
  8. Garnish with fresh cilantro before serving.
