Ingredients

- 1/2 cup coconut milk
- 1 lime, juiced

Instructions
- Cook rice according to package instructions.
- In a skillet, sauté chicken over medium heat until cooked through.
- Add sweet chili sauce, bell peppers, and carrots to the skillet. Stir well.
- In a bowl, mix coconut milk and lime juice to create the drizzle.
- Assemble the bowl: layer rice, chicken mixture, and drizzle on top.
- Garnish with green onions.
