Ingredients

- 1 cup coconut milk
- 1/4 cup coconut cream
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk coconut milk, coconut cream, egg, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form, then flip and cook until golden.
- Serve warm with syrup or toppings of choice.
Notes
- For a richer flavor, use unsweetened coconut cream.
- Serve with fresh fruit for added taste.
- Store leftovers in an airtight container in the fridge.
