- 2 cups sweet potatoes, peeled and diced
- 2 cups apples, peeled and sliced
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup butter, melted
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine sweet potatoes and apples.
- Add cinnamon, nutmeg, vanilla, and salt. Mix well.
- Transfer the mixture to a baking dish.
- In another bowl, mix rolled oats, brown sugar, and melted butter.
- Spread the oat mixture over the sweet potato and apple layer.
- Bake for 30-35 minutes until the topping is golden and the sweet potatoes are tender.
- Let cool slightly before serving.
Notes
- Adjust the sweetness by adding more or less brown sugar.
- Serve warm with ice cream or whipped cream.
