Ingredients

- 2 medium sweet potatoes
- 1 cup spinach
- 1/2 cup cooked quinoa
- 1/4 cup feta cheese
- 1 avocado, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- Toss sweet potatoes with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25 minutes, or until tender.
- While sweet potatoes roast, cook quinoa according to package instructions.
- In a pan, sauté spinach until wilted.
- Assemble the bowl: add quinoa, sweet potatoes, spinach, feta, and avocado.
