A tasty appetizer featuring sweet potato rounds topped with brie, cranberry, and pecans.
Ingredients

- 2 medium sweet potatoes
- 8 ounces brie cheese
- 1 cup cranberry sauce
- 1/2 cup pecans, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice sweet potatoes into 1/4-inch rounds.
- Toss sweet potato rounds with olive oil, salt, and pepper.
- Arrange sweet potato rounds on a baking sheet.
- Bake for 20-25 minutes until tender.
- Remove from oven and top each round with a slice of brie.
- Add a spoonful of cranberry sauce on top of the brie.
- Sprinkle chopped pecans over the cranberry sauce.
- Return to the oven for 5-7 minutes until the cheese is melted.
- Serve warm.
Notes
- For a sweeter taste, use maple syrup on the sweet potatoes.
- Try different nuts like walnuts or almonds.
- Can be prepared ahead and baked just before serving.
