Description

A tasty appetizer featuring sweet potato rounds topped with brie, cranberry, and pecans.


Ingredients

  • 2 medium sweet potatoes
  • 8 ounces brie cheese
  • 1 cup cranberry sauce
  • 1/2 cup pecans, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into 1/4-inch rounds.
  3. Toss sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange sweet potato rounds on a baking sheet.
  5. Bake for 20-25 minutes until tender.
  6. Remove from oven and top each round with a slice of brie.
  7. Add a spoonful of cranberry sauce on top of the brie.
  8. Sprinkle chopped pecans over the cranberry sauce.
  9. Return to the oven for 5-7 minutes until the cheese is melted.
  10. Serve warm.
