Description
A hearty and flavorful tamale soup topped with tamale dumplings.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup corn
- 1 can black beans, drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups masa harina
- 1 cup water
- 1 teaspoon baking powder
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Stir in the vegetable broth, diced tomatoes, corn, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.
- In a bowl, mix masa harina, water, and baking powder to form a dough.
- Drop spoonfuls of the masa dough into the boiling soup.
- Cover and cook for 15 minutes until dumplings are cooked through.
- Serve hot and enjoy.
Notes
- This soup can be made ahead and stored in the fridge.
- Reheat on the stove before serving.
- Add lime juice for extra flavor.
