Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 can black beans, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups masa harina
  • 1 cup water
  • 1 teaspoon baking powder

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until soft.
  3. Stir in the vegetable broth, diced tomatoes, corn, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. In a bowl, mix masa harina, water, and baking powder to form a dough.
  5. Drop spoonfuls of the masa dough into the boiling soup.
  6. Cover and cook for 15 minutes until dumplings are cooked through.
  7. Serve hot and enjoy.

Notes

  • This soup can be made ahead and stored in the fridge.
  • Reheat on the stove before serving.
