- 2 large bell peppers
- 1 cup cooked chicken, shredded
- 1/2 cup pineapple chunks
- 1/4 cup teriyaki sauce
- 1/2 cup cooked rice
- 1/4 cup green onions, chopped
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the bell peppers in half and remove seeds.
- In a bowl, mix the chicken, pineapple, teriyaki sauce, rice, and green onions.
- Stuff the bell pepper halves with the mixture.
- Top with shredded cheese.
- Place in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.

- Use fresh or canned pineapple.
- Substitute chicken with tofu for a vegetarian option.
