Ingredients

- 2 ripe mangoes, peeled and sliced
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 1 carrot, grated
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanuts, crushed
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 red chili, finely chopped
Instructions
- Prepare all the vegetables and mangoes.
- In a bowl, mix lime juice, fish sauce, sugar, and chili.
- Add the mangoes, bell pepper, cucumber, carrot, and cilantro to the bowl.
- Toss the salad gently to combine.
- Top with crushed peanuts before serving.
Notes
- Adjust the spice level by adding more or less chili.
- Use ripe mangoes for the best flavor.
