Description
A warm and comforting tomato soup made with canned tomatoes, perfect for winter.
Ingredients

- 2 cans of diced tomatoes (14.5 oz each)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 cups of vegetable broth
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- Salt to taste
- Pepper to taste
- 1 tablespoon of olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic. Cook until softened.
- Add canned tomatoes, vegetable broth, basil, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth.
- Season with salt and pepper. Serve hot.
Notes
- Feel free to add cream for a richer taste.
- Serve with crusty bread for a complete meal.
- Add fresh herbs for garnish.
