Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled
- 1/4 cup water, ice cold
- 1 lb ground beef
- 1 onion, finely chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix flour and salt.
- Add chilled butter and rub until the mixture resembles breadcrumbs.
- Stir in ice-cold water until a dough forms.
- Wrap dough in plastic and refrigerate for 30 minutes.
- In a pan, cook onions until soft.
- Add ground beef, salt, pepper, and thyme. Cook until browned.
- Roll out the pastry and line a pie dish.
- Fill with the meat mixture.
- Cover with pastry, seal, and cut slits for steam.
- Brush with beaten egg.
- Bake for 25-30 minutes until golden brown.
Notes
- Let the pies cool slightly before serving.
- Serve with mashed potatoes or peas.
- Can be made ahead and reheated.
