- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 teaspoon lime zest
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking dish.
- In a bowl, mix flour, shredded coconut, powdered sugar, melted butter, and salt.
- Press the mixture into the bottom of the prepared baking dish.
- Bake for 15 minutes until lightly golden.
- In another bowl, whisk eggs, granulated sugar, lime juice, lime zest, and baking powder.
- Pour the egg mixture over the baked crust.
- Bake for an additional 20 minutes until set.
- Let cool before cutting into bars.
Notes
- Store bars in the refrigerator for up to a week.
- For a stronger lime flavor, add more lime zest.
- These bars can be served chilled or at room temperature.
