Description

Turkey and pumpkin meatballs served in a spiced tomato sauce.


Ingredients

  • 1 pound ground turkey
  • 1 cup pumpkin puree
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 cups tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, pumpkin puree, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, pepper, and red pepper flakes.
  3. Mix until well combined.
  4. Form the mixture into meatballs, about 1 inch in diameter.
  5. Place meatballs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until cooked through.
  7. In a saucepan, heat tomato sauce over medium heat.
  8. Add ground cumin and paprika to the sauce and stir.
  9. Add baked meatballs to the sauce and simmer for 5-10 minutes.
  10. Serve warm.
