Description
Turkey and pumpkin meatballs served in a spiced tomato sauce.
Ingredients

- 1 pound ground turkey
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 cups tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground turkey, pumpkin puree, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, pepper, and red pepper flakes.
- Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until cooked through.
- In a saucepan, heat tomato sauce over medium heat.
- Add ground cumin and paprika to the sauce and stir.
- Add baked meatballs to the sauce and simmer for 5-10 minutes.
- Serve warm.
Notes
- Use fresh pumpkin puree for better flavor.
- Adjust spices according to your taste.
- Serve with pasta or rice if desired.
