A creamy and rich vegan soup made with fresh mushrooms and herbs.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 500g mushrooms, sliced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons nutritional yeast
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add sliced mushrooms, cook until they release moisture.
- Pour in vegetable broth, bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in coconut milk and nutritional yeast.
- Blend the soup until smooth using an immersion blender.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Use any type of mushrooms you prefer.
- Adjust consistency by adding more broth if needed.
- Store leftovers in the fridge for up to 3 days.
