- 1 1/2 cups pumpkin puree
- 1 cup coconut milk
- 3/4 cup brown sugar
- 1/4 cup cornstarch
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 1 pre-made vegan pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, coconut milk, brown sugar, cornstarch, cinnamon, nutmeg, ginger, and salt.
- Pour the mixture into the vegan pie crust.
- Bake for 45 minutes or until set.
- Let it cool before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Can be served with vegan whipped cream.
- Use homemade pumpkin puree for more flavor.
